This Week's Video: Sauerkraut
A 1-minute video on the extremely simple process of making sauerkraut.
Andy Hanson has worked with Underground for years now, and we have always been inspired by his cooking and ongoing fermentation of vegetables. You may know him from Kindly Kraut. He says, a good ratio : about 3 cabbage heads to 2 tblsp salt. For fresher, crispier product, ferment for a shorter time period. For more sour, softer product, portray some patience. Like multiple months' worth.
