This September - Three Class Offerings.
This month we'll be offering three classes at our Underground Meats facility:
:: WHOLE HOG BREAKDOWNS ::
Friday September 28, 6pm.
Saturday September 29, 10am.
You'll have the opportunity to butcher a half hog into primal and various sub-primal cuts. They are tamworth hogs that Roller Coaster Farms raised for us. You'll also learn the basics of sub-primal cuts, sausage making and the processes of making salami and dry-curing. The class is held in our Underground Meats processing facility, so you'll get to check that out as well. $140 ***SOLD OUT***
:: INTRODUCTION TO SAUSAGE MAKING ::
Saturday September 29, 5pm.
This class offers a walkthrough on prepping, seasoning, grinding, and stuffing your own sausages. The pork is from Roller Coaster Farms; they've raised us beautiful tamworth hogs. This class is also held in our Underground Meats processing facility, so you will get a chance to see how we do these processes on a bit of a larger scale. $120 **SOLD OUT**
The classes are limited to just 12 participants and includes food and drink from Underground Catering. Participants go home with 8+ pounds of personally wrapped cuts which often include a variety of pork chops, tenderloin, ribs, bacon and more.
