Learning at Underground

No one quite knows everything that goes on at the prep kitchen on any given day (except maybe jen); but a couple of days per month we open up the Underground Meats workantine to host some informational hands-on classes that give people a chance to learn a process or two, start to finish. 

I tagged along on one of our recent whole hog classes so that we could share with you what these classes look like.
